On the equipment screen, there are two rows on the top left - one for weapons, and the other for shields or bows. The torch can be assigned to either of these based on your preference. Decide a slot then select the torch. Now during play, press Left or Right on the D-pad - depending on which slot or side you assigned the Torch to - to swap to the torch in that hand. With the Torch available, you are now free to explore dark locations much easier.
